Vegan Thai Chocolate Cremes

This recipe was made up pretty much over the weekend... but with a few referrals to other websites - I couldn't find any recipes that used this combination of ingredients... the first batch of 6 went down very well indeed.. :-)

The flavours are Chilli / Lime / Coconut / Mango

Rough instructions:

Shell:

Organic Seed & Bean Extra Dark Chocolate - Chilli & Lime

- I needed about 2x100g bars for 6 pieces.

White Inside - i didn't measure the amounts:

Creamed coconut - grated - about an inch of a block finely grated

Non-sweetened dessicated coconut

Agave syrup or golden syrup - enough to make a thick paste or a little more...

- Mash to a thick paste with a fork...

Yellow:

Dried mango left to rehydrate in water for 30 mins - drained and dabbed dry...

- Mash the mango with the coconut...

Construction:

1) Melt the chocolate in a bowl over simmering water... spoon into moulds (I used a silicone muffin pan from Lakeland) ... turn the mould so that the bottom is covered all over.. I floated the pan in cold water to speed the cooling process. Then I let them set whilst I made the filling. You could add a second layer if the first does not reach all up the edge of the mould.. but you do need to cover the sides of the mould quite well..

2) take a small amount of coconut, shape into a disc that fits into the mould and drop it into the bottom of each chocolate mould - this would be the top white layer in the photo, - gently press the mixture down - not too hard - don't worry about gaps.. it doesn't matter how you choose to fill it.. the idea is to fill with three layers...

3) take a small disc of the mango mixture and drop in on top...smooth down with finger or teaspoon...

4) top with a final thin disc of coconut... don't fill right to the top of the mould or there's no room for the last layer of chocolate...

5) Melt more chocolate in a bowl... spoon chocolate over each filled mould so that the mould is completely filled and flattened over right to the edges... I used a spoon to gently press down on the mixture as I topped each up.. be careful not to push down too hard...

6) Leave to set in the fridge . away from hands...
