My First Tofu

This was my first ever attempt at making tofu (in 2011)... which I discovered is about as easy as boiling an egg - although it takes a lot longer :-)

1/2 cup of soya beans were rinsed, soaked for about 8-10 hours.. then blend them up with soaking water.. pour into a saucepan.. add 1.5 cups of water and blend.

Blended beans in water - this is called 'namago'

Heat this up slowly to 185F stirring occasionally - when it reaches 185F it will bubble and rise up - turn off the heat. Stir the foam back into the 'go' ... then cook on a low heat very gently for 10 minutes... then let it cool. Pour into a sarashi bag (muslin bag) and squeeze out the soya milk.

This produces about 3 cups of soya milk (tonyu) and a small muslin bag of soy lees (okara)

okara can be fried up with savoury foods.. or made into vegan fish cakes with onions and vegetarian worcestershire sauce (or Hendersons) (find a recipe for okara fish cakes online...)
