Taro root Crepes with Walnut Miso

A must-try tasty Japanese-style petit crepe. Wrap up the sweet and fragrant miso!

Ingredients:

    • Mixture A

      • 3x Taro corms (skin removed and grated finely) (里芋)

      • Soft Flour (cake flour) - 4 heaped tablespoons (薄力粉)

      • Apple Juice (100% straight) - 50ml

      • Salt - pinch

    • Vegetable Oil

    • Walnut Miso Filling

      • Walnuts (finely chopped) - 2 tablespoons

      • Barley Miso - 1 tablespoon (raw) (麦みそ)

      • White Miso - 1 tablespoon (raw) (白みそ)

Method:

    1. Mix all the ingredients in MixtureA. Heat the oil in a frying pan, add MixtureA making thin, small round shapes, fry until the colour is gently browned and tasty looking.

    2. Mix together the Walnut Miso filling ingredients. Wrap a little into each crepe.

Note - First Attempt: I think my taro corms were too small, the mixture was not runny enough - too sticky so I could not form round shapes easily - and it produced thicker pancakes that would not roll up (they folded in half)... still tasted good tho! Worked very well with the walnut and miso filling...

These pancakes are not huge... they only need to be about 3-4 inches in diameter.
