Red Pepper Ice Cream

Translated by Oliver Slay from Kanou Yumiko's Sai Sai Sweets.

A colourful ice cream, which traps in the sweetness and acidity of the red pepper.

Ingredients:

    • 5 Red Peppers (sweet variety)

    • Lemon Juice - 2 tablespoons (=30ml)

    • Amazake (no added sugar) 300g

    • Salt - pinch

Method:

    1. Char the skin of the red pepper by cooking over a flame or in an oven toaster. Remove all the charred skin and the seeds etc.

    2. Put the skinned peppers and all the remaining ingredients into a food mixer or food processor and blend until smooth; transfer to a container and leave to freeze overnight.

    3. When it has hardened, blend in the food processor or mixer again, and then freeze it again.
