Dashi

If you go to a Japanese restaurant - unfortunately most noodle soups will have a katsuo-dashi. Miso soup is also usually made with this fish-based stock.

Dashi is soup stock. In Japan the majority of restaurants use fish stock - katsuo-dashi. However not all restaurants do. Some restaurants may make up some kombu-dashi if you ask them beforehand.

Kombu-dashi - simmer a small pan of water with about 5-6cm of kombu (cut stripes into the piece of kombu to help let the water reach a greater surface area). Adding 2-3 dried shiitake adds extra umami to the stock.
