A colourful ice cream, which traps in the sweetness and acidity of the red pepper.
Ingredients:
5 Red Peppers (sweet variety)
Lemon Juice - 2 tablespoons (=30ml)
Amazake (no added sugar) 300g
Salt - pinch
Method:
Char the skin of the red pepper by cooking over a flame or in an oven toaster. Remove all the charred skin and the seeds etc.
Put the skinned peppers and all the remaining ingredients into a food mixer or food processor and blend until smooth; transfer to a container and leave to freeze overnight.
When it has hardened, blend in the food processor or mixer again, and then freeze it again.
